Chapter I
The dehesa

Where it all begins

Dehesa landscape with holm oaks in golden evening light
02The dehesa of the Sierra de Aracena: holm oaks, pasture and hills as far as the eye can see.
03A walk through the dehesa, at the pace of the countryside.

Iberian ham begins long before the drying room. It begins in the dehesa, that open woodland of holm and cork oaks where the Iberian pig lives free, walks for miles every day and forages for its own food.

In autumn the acorns fall and the land becomes a larder. That unhurried, free-range life is what you later taste in the marbled fat, in the aroma and in every slice.

«Time cannot be made. It can only be waited for.»

Iberico guide

Three colours, three stories

The colour of the tag is not decoration: it is set by the Spanish Iberian quality standard. It tells you the pig’s breed, how it was raised and what it ate. Learn to read it and you will know exactly what you are buying.

36
months, at the very least.

Bellota and Plata Negra hams. The shoulder, over 20 months.

In the mountain drying rooms the ham cures naturally: the cold, dry winter air, the gentle summer warmth and nothing else. Months, sometimes years, until the leg is ready.

That is why we choose producers who never rush the process. You can tell from the very first slice.
